Greek Yogurt Twice Baked Potatoes



 
When are you coming over for dinner? Next time you make twiced baked potatoes try greek yogurt instead of sour cream!

240 Calorie Pizza!

 
Who doesn't love pizza? How about one that is under 240 calories for the whole thing! I'M IN!
 
Harvest Wheat Flat Out wrap
1 tbsp garlic hummus
1/4 cup mozzarella
spinach
bell pepper (I like orange!)
Sriracha Hot sauce (optional)
 
spray the pizza wrap with pam and bake at 350 for 5 minutes until slightly brown. Cover with hummus, cheese, and toppings. Bake until cheese has melted and top with hot sauce!
 
YUM!
 
In school news, I have one more final on Thursday and life is good! I wish I could have told myself this two months or so ago (see blogs about surgery).
 
In life news, I moved out of the ghetto and now I walk to school and back home for at least one hour exercise built right in! Im so happy :)

Digging My Way Out

Today was one of my longer days back to school from 10-5. I feel like I got a lot accomplished including a one on one visit with my physiology professor, a visit with academics counseling, and a great session with the school therapist. I feel a lot better after getting some of my feelings out, and letting them breathe/ be validated. After school, I came home to a house full of GROCERIES! I was beyond happy that Marc went shopping. This was a long time coming folks. Dinner was a little bit too big for my stomach LOL! I ended up saving the hummus for tomorrow and put the pretzels on my salad. Very good stuff. Chili was a gift from my mother in law, and it was so good!

For dessert, I saw we had quite a bit of apples in the house so I made some honey cinnamon apples in the toaster oven. Now my house smells FABULOUS!

Alrighty, I've got to finish studying for my organic chemistry exam tomorrow on protein structures. Goodnight!

Down in the Dumps

Do you ever have those nights where nothing immediately has gone wrong, but you're overwhelming sad anyway? I'm feeling pretty down in the dumps tonight. I hate feeling like this, but it kind of seems that everywhere my mind turns, it's a negative feeling. Whether it be sadness, despair at the unknown, fear, guilt, jealousy, or straight up rage, I can't seem to get past it. It seems like EVERY aspect of my life is filled with negativity at the moment, I just need to try and get past it I guess. There is no way through it, except to just go through it.

So I'm going to watch some youtube videos and try to forget about it.

My Appendix!

Well if you picked option number three, you'd be right.

I was sick for a whole week before they realized what was wrong with me. I was diagnosed with a UTI, which was not "true". In reality I was suffering from a real weird case of Appendicitis that lasted a week without rupturing. This just happened to be in the same week I had a head on car accident that totaled my vehicle, and it also happened the week before Midterms. The surgeon said today it would be a one in one trillion chance that this was caused by the accident, so I'm screwed. Plus I have NO health insurance, so I'm QUADRUPLE screwed.

Can anyone give me some good luck cause I could use some!

I guess the silver lining of the whole event is that...

1) I'm not dead
2) My professors are being very understanding and letting me do makeup work
3) My appendix didn't burst and create chaos in my body
4) I lost 7 pounds and haven't gained it back yet even though I only want to eat chocolate pudding cups and chocolate milk.

Accident update, plus PIZZA!

So, as you could prbably imagine, the accident has left me utterly freaked. I am scared of getting in the car. I had to go to Urgent Care yesterday and was told I have bruised ribs, chest contusion, and severe whiplash. I'm feeling better since they've got me doped up on pain meds, but beng dopey means no school. I took off to day and tomorrow. On the bright side, none of my injuries are all that serious. Plus we were just told that the car is totaled (deemed by insurance) and we will be getting back 700$ more than what we owed. Which is GREAT NEWS! We went to the salvage yard to say goodbye...



I'm nervous about getting very far behind in school. I just have to try to relax and know that I am dedicated enough to get caught up. My professors have been extremely understanding so let's hope they stay that way. The jury is still out on if I will be getting another vehicle. I'm kind of leaning against it as we could use the money we spent on car payment each month, I get car pooled, and marc's job is a bit flexible at the moment. However, nothing is set in stone.


To try and celebrate a shitty week, Marc and I made pizza. Can you guess what's on Marc's pizza? Scroll down for answer...


Answer: Roasted Cherry tomatoes, jalapeno, goat cheese and american cheese over a garlic oil sauce.

I made all of the doughs in the bread machine, with garlic red pepper flakes, and oregano in the crust.

Transfer Pizza and Babe's Ice Cream!

 
 
Marc and I decided to try out a "new to us" Pizzeria. It was just our luck that this restaurant was a lot closer to where we lived than we expected!
 
Transfer Pizza is a wonderfully hidden spot. If it weren't for Urbanspoon I wouldn't have even known about it!  
 
 
I guess I should start with the only "con" part of our experience. The sign stated for us to wait to be seated, we were called on to follow a waitress to the back room. She ended up deserting us and taking someones order while we were just standing there for what seemed like an eternity. It seemed like a serious "A.D.D" moment for our waitress, she just left us it was weird! A while later another waitress helped us out. I just don't like that kind of awkward seating thing!
 
 
After drinks, I had a perfect Rum and coke, (they definitely give you your money's worth) Marc had a Lakefront IPA (Deemed different and equally delicious). We anxiously waited our pizza! They decor is gorgeous, and we had plenty of conversation about how we'd like our house to look like the pizza place!
 
 
 
 
 
We chose the Fiesta, a garlic white sauce pizza with mushrooms and red peppers. I am not lying when I say this was the BEST pizza I have ever tasted. The chef was taught in Italy, so it felt special to try his pizza, seemingly tasting a slice of Italy!  
 


 
After our perfect dinner, in which Marc helped me study for my conversions exam today EEK! We decided the best way to end a perfect Sunday evening is with some ice cream. Off to Babe's we went! The lady behind the counter was so gracious, even  though they were closing up she let us purchase some! We got a waffle bowl with mint chip (my fave) and some chocolate kind for Marc.

Sunday Walks

My friend Angie and I went on a walk at a local park today. It was really nice to see the leaves changing as well as seeing the geese and ducks playing in the water. I really enjoyed spending time with Angie, she's like my therapist! I gotta get a picture of her next time! (HINT ANGIE!)

Lunch came afterwards I made a Chevre and beet salad with balsamic and sesame oil. I made whole wheat gnochi and tomato basil sauce on the side.

Meh Breakkie

I just made savory oats for the first time. I was dissapointed. This is the recipe I used, and it looked beautiful.

 
 

I just felt like there was something lacking...maybe the fact that these are savory oats and not sweet! ha! Marc loved  liked them so maybe it's just me. I just thought the runny egg mixed with the runny oatmeal made me kinda naseus first thing in the morning. With that awesomely GROSS picture in your mind. Try this oatmeal (I added turkey bacon and sliced cheese since I didn't have parmesan) for yourself and see if it's just my crazy tastebuds!

A Memorial and Dinner

I was cleaning the house today and decided to make a little memorial to Nana and Dziadek. White and red candles for the Polish flag.

I am so exhausted, I can't even come up with anything else to say. so... here is what I made for dinner. It was really good, try it!


I have some whole wheat bread baking in the bread machine. I tried pastry flour, since I was out of regular. I think it's not going to turn out, we'll see!

Zoo Day!

Today was zoo day and we had a lot of fun! I think we were both able to let some stress go. I don't think I thought of school and stress more than just a handful of times. Which is pretty good considering! I thought I'd share some of my favorite pictures from the day. '

Pumpkin Time!

I think I forgot to tell you guys that I got an AB on my test last week! I'm proud :) I have another test tomorrow though, and I haven't been as disciplined to study. We are actually headed to the zoo today to try and clear our heads (we got free tickets). So studying will come later.

I made pumpkin oats for breakfast, which is actually Marc's favorite! That surprised me! He said it's because of the peanut butter after some prodding LOL!

2 cups oats, 1 cup milk, 1 cup water, 1 cup pumpkin, cinnamon, nutmeg, brown sugar to taste :) A blob of smucker's Natural PB on top!
