I forgot it again!!

My camera is yet again...at home.

I slept in soo late today! I think I woke up at around 12:15pm. Marc had to work the overnight shift and it was actually really hard trying to sleep. I actually MISSED his snoring-bed-hogging. When we have our own house, we'll need to purchase a king size bed though :).

So after waking up and being a little cranky from over sleeping I set off to do the dishes and clean the kitchen. My original (pissed off) plan was just to go downstairs and eat my breakfast but that was postponed when I saw how wrecked the kitchen looked from last nights dinner. I thought Marc would have cleaned it after I left for work but I guess he needed to sleep. I'm not upset at him about it though because he had a really busy day yesterday.

So off I cleaned and cleaned, all the left over Tupperware containers, the George Foreman whose caked on chicken and fish remnants really grossed me out, and little bowls from yogurts and such....it's so annoying and tedious. A dishwasher does sound nice sometimes but I know that we are even worse off with one than without. weird I know.

After the cleaning fest, it was about 2:30pm and I hadn't even eaten yet!! So I made some quick deviled eggs and had it with grapes and a prune (two are shown, but I only ate one). Prunes are really good for you and super fast eating so you can have a whole serving of fruit in just one bite.



The deviled eggs were made with bacon ranch no calorie dressing, dijon mustard, and a smidge of sweet relish. The sweet relish has high fructose corn syrup in it but I don't enjoy/like deviled eggs without it. Kinda necessary for me today!


Right after that meal I had some plain yogurt with a packet of truvia and some lemon juice. This is one of my favorite flavors for yogurt mmm lemon!


My lunch wasn't even thought of until 3:55pm and I was struggling to make something really quick to eat at work. I managed to thaw out some salmon, heat up the rest of the Bok Choy from yesterday and half of a can of green beans. I love canned green beans but the sodium is ridiculous. I only have them if I really have NO time left to eat/make food. I love green beans with red pepper flakes, but for some reason the shaker cap was not on the bottle and I spilled
so much on my food.



Before I left for work I ate a portion of salmon, and had the rest around 6:45pm.

Thankfully I can send a picture from my cell phone to my sister and she emails it to me lol...that way I don't miss dinner time.

Tonight I'm planning on making something a little different for dessert/snack. I'm going to have something called "snow pudding".

The recipe calls for artificial sweetener to equal one cup of sugar. I'm wondering if i should stick to that or maybe try to lessen the sweetener? I'm not sure.

*** Update: I had no gelatin so I made cinnamon apples and yogurt. I know what a shock.

Another good piece of news (that will hopefully outweigh the semi "bad" day I had today) was that I lost another pound! Which leads me to a total of 8 pounds lost! I'm feeling very confident to get those last 2 goal pounds before January 11th!

Tomorrow Marc has to work from 3pm to 10pm so I'm planning on taking a trip to the laundromat (maybe), goodwill, and maybe the value cinema? If I go to the cinema I want to see either

One more pound!

I'm so excited I lost another pound! This actually surprised me because I was really feeling like I wasn't going to see a good number. So that means I've lost 6 pounds in 4 days! I feel so much better, and really don't crave any crap, which I thought would never happen. Yesterday I was craving so bad...

But you know what I figured out today? Yes these foods are awesome and comforting and great, but I know what they taste like, and I know what it feels like to eat it! That's why i eat it, because it makes me feel good! But maybe instead of feeling good for the 10 minutes it takes me to scarf down this unhealthy food, I can trade it in for feeling good forever! Once I get off this phase of my diet, I'll be eating more food choices, lean red meats, shellfish, potatoes, brown rice, and oats. I know that i am going to be able to resist the sweets and the junk and the "fake" foods because I've recharged my taste buds and my willpower. This change has made me realize how strong I really am (believe me I have cinnamon rolls, chocolates, fried chicken, and french fries in my house right now) I haven't given in once! I can do this, we all can do this!

Today I read the new issue of People magazine and it gave so many inspirational stories of people who have conquered their struggle with food and weight. I recommend picking it up, it is really inspiring! I'm thinking of tacking up some of the pictures next to my treadmill!

My meals today:
Hot water with lemon
Plain nonfat yogurt with strawberries and blueberries
Roasted chicken thigh and drumstick, skin removed. Serving of grapes.
Muffin In a Minute w/ sugar free strawberry jam (I don't think this is allowed on my plan, I'll see what happens with weight tomorrow more info later on)
Chicken Pesto Soup
Yogurt with cinnamon

A Muffin in a Minute is something that I remember making a lot while I was on the Atkins diet back in 2008. I really enjoyed it for a snack and thought I'd try to make it today! I am not sure if it is allowed on this plan but I substituted the butter for Canola oil.

To make this (which is way high in fiber, and omega 3's)
Mix together in a mug
3 tbsp flax meal
1/2 tsp baking powder
1 packet truvia, or other sugar substitute
1 tsp cinnamon
1 tsp canola oil, or butter (depending)

Microwave for 1 minute, and enjoy!

Marc and I went to Target today and picked him out a shirt to wear under his new suit jacket! We are so excited to be going out for New Years this year! I can't wait to show our new outfits!

It's a school day...

Today is a school day and I'm beat.


I went to both classes as usual and am glad I don't have to go back until next Tuesday! One really good thing that I found out in my history class is that I don't have to take the final exam if I get out of the class with a 90 average...YES! I know I'm quite up there so I just have to ace my next test and I'll be golden! This is perfect :)

I went to the library after class and picked out three books.






I'm half way through the Billie Holiday book and her life was TRAGIC! I highly recommend it. I love a good memoir.

So I must confess. I didn't go to Curves today..I had my gym clothes on and everything and i just couldn't get myself to go. It wasn't a self motivation thing (I walked today) it was more of a "Wow I really don't like Curves anymore". I can't get myself to go because there is no one there to relate to, and I feel like I would rather be riding a gym bike or using an elliptical. It's more what I am used to. Plus all the ladies there are old as the hills. So I'm trying to figure out what my next move is. I have a contract until April so should I just pay off my amount due which is 170$ (34 per month) and go to another gym? I would think that just finishing out with Curves and using my plan would be the best idea...but when next semester starts I wont be able to go to Curves, and go home to shower and clean up and then go to school! Curves is right next to the school and college is about 20 minutes from the house. I'm sorry but in the dead of winter I am not getting up earlier than 8am to clean off the car, dig out the car, go to Curves, drive home, shower,get ready, drive back to where curves is to go to class, and then go to work until 11pm.

Do you have any ideas for me? What do you think I should do? I have a mini treadmill at home?


One problem I've been trying to deal with (off the record haha) lately is seasonal depression. It just is sooo cold and windy and dark. It's hard for me to deal with. I'm taking advice from Tina at her Carrots and Cake blog and using this mantra "Get up, Get Dressed, and Get Going. I am spending too much time in bed I need to try harder! This is a big reason why I am pushing myself so hard in school next semester. I have so much time to be taking control over my life I just need to get going!


Tomorrow I am going to wake up at 9:30am and I'm going to accomplish these tasks:

Go to the bank
Go to the grocery store
Exchange purchase at Walmart
Do the laundry at the laundromat
Exchange pantry for cupboards (explained later)

I'll let you know if I can get all of my list accomplished but I feel pretty good about it!
