Bad Days Sometimes Turn into the Best Days!

I almost cut my thumb off cutting carrots for slow cooker soup this morning. (I ended up just cutting ofF my fingernail..SHARP KNIFE!)


I found out a classmate who I let borrow my homework and notes dropped the course.

I put my new sheets of homework in a water puddle...in the BATHROOM!

I forgot to drink my coffee this morning, so I almost fell asleep, and couldn't pay attention.


etc etc.. the list goes on...BUT... sometimes bad days can turn in the best days.

I got a phone call today and I've been accepted to Mt. Mary in the fall! I'm beyond excited! Plus I get a 7500 grant because of my MATC GPA! Plus another 500 dollars when I finish my financial aid! I'm over the moon right now guys!

Sleepwalking on the Treadmill

I was so tired this morning! I think I was still asleep when I jumped on the treadmill at the gym because I did one of these numbers..




well that's probably a bit dramatic, but I did trip all the same. I was jogging, so the speed was cranked up. Oh well, I don't think anybody saw me because I was only one of 3 people in the whole gym!

I also went to my first Chemistry Lab today. We watched a safety video where people get stabbed by broken test tubes, gotten sulfuric acid to the eyeballs, and also a guy that had to get buck naked in the middle of class and take a shower in order to get the chemicals off his body. It was insane. The best part was that it was an instructional video from the 80's so the actors styles were crazy.

Weekend's Are For Naps

This weekend was so jam packed, I never even got to rest from the busy week! Isn't that how it always happens? I just drank some Emergen-C, hopefully it will make me feel better, I'm afraid I'm catching a cold. Ugh. The last thing I need.

Marc enjoyed his birthday, and got a his free Red Robin burger, everyone knows how much (or should know) how much he likes his burgers HA! This picture never stops making me laugh, his face is HILARIOUS! That's what a 6'9 giant man looks like when he's have a foodgasm!!!


Plus I got some new shoes! I'm going through my closet and slowly exchanging all of my flats to wedges, or heels. I feel leaner, and more confident in them so why not change it up?
I got these on sale originally at $110, for $34.00! They're Nine West!

Plus my jeans fit better with heels, since my legs are so short!

Hope you guys had a great weekend. I didn't eat so well, but I didn't go CRAZY either! So that's a plus!

I swear I'll get more organized soon, once this new schedule becomes a habit. Can I just say how exhausted I am? I'm so glad today is my Friday. I really needed it. I haven't been to the point of falling asleep while driving (THANK THE LORD) but I've not been thinking too clearly. I don't think it's sleep deprivation, but maybe just a drastic change of lifestyle. Usually I'm not busy from sunup to sun down so that being my life now, has made me just overwhelmingly exhausted.

Why can't this be me???

This weekend should be fun! It's my husbands 31st birthday on Saturday! We are going to Red Robin for his free burger (I'll be getting something less fun), and then to the movies for Sherlock Holmes. He's excited, so that's good. I guess your 31st birthday can't be as fun as your 30th! Here are some pictures from his birthday last year...

I surprised him with all his family and friends at a Mexican restaurant, and then we all went to a comedy show! We spent the weekend in Chicago, it was all so much fun!
He was shocked! I'm just putting in time for a rocking 30th...in 2019 HAHAHA! Yup he "robbed the cradle", his favorite joke is that he fell in love with me as I was walking off the school bus with my care bears backpack..

Oh What a Day!

I came, I saw, I conquered.

45 minutes at the gym (burned 500 calories YAY)

Got all my answers right in Algebra, OH YEAH!

Chemistry was a breeze, learned about formulas of temperature conversion.

Almost was murdered by an idiot driver who decided to do a sharp Uturn right in front of my car, and when I get angry he got OUT of his car. I yelled a bunch of (extremely embarrassing) things...and eventually told him that I'm still in my multiple ton vehicle while he is outside of his harassing me, does that seem like the wisest plan? Seriously this guy was a douche.

Anyway, I got to watch The Biggest Loser before going to work! Conda was KILLING ME! That girl drives me batty.

now I'm at work, homework's done and I'm sooo ready to crawl into my warm bed and sleep sleep sleep.

I just got the idea of how to link my nutrition page from Jen at The shape of things to come... seriously go check out her page. She inspires me soo much, and a great role model!

Raspberry Cheescake Oats

Today I've been letting stress get to me when it really should just be rolling off my back. It's just a lot of little things that have been getting me down, but I'm trying my best to see the positive side of everything. Easier said than done.

Anyway, I did make some yummy eats today for school and work! I made another OIAJ (oats in a jar) and it turned out really well. I think this tastes very reminiscent of raspberry cheesecake, so that's what I'm naming it!

I love that I can just stick this in my bag and not worry about it spilling! Mason jars are my favorite!



This is the recipe:

6 ounces nonfat, plain yogurt
1 scoop vanilla protein powder, mixed in the yogurt
1/2 cup old fashioned oats, also mixed into the yogurt
1/2 cup frozen raspberries on top

put in the fridge overnight, and when you're ready to eat just stir! It turns pink and it is so yummy! It's a heavy breakfast at 400 calories, but full of protein, and healthy carbs! As a college student, this is a great option for me because I don't have to worry about having a growly stomach half way through class! I ate breakfast at 9am this morning and didn't have to eat again until 1pm!

For lunch I just had a turkey sammie, but I'm so excited for dinner here at work!

I made SlimKatie's Ziti! Click the link for the recipe, the only thing I didn't do (mainly because the recipe ingredients were so easy, I didn't think to look at the recipe again) was bake it, I just stirred everything in the pot with some spinach! It cracks me up because the recipe name is actually baked ziti! Oh boy. I added some broccoli too cause I'm a good girl that eats her veggies :)


Marc LOVED this recipe, it calls for four servings, but after I made a serving for myself, he ate the rest. He kept saying, ummm Czesia? Can I have some more?!? This is when I know it's a good recipe! Thanks Katie, next time I'm actually going to follow directions and not be a space cadet!

My Ballz R Freezin'

It's a million below zero outside. Why did winter have to come? I thought we were going to not have one this year. Do we have to have winter every year? Can't it just be late spring and skip to early fall?

Me no likey.


I'm also feeling really hungry today, but i've stuck on my diet. I had Biology class today, it starts at 9am and ends at 12:30. The only problem I have with that is she told us she doesn't give breaks! Oh boy. She told us to tell her if any of us were pregnant or diabetic so she could excuse us to have a snack in mid class. When she came over to my group I told her I was pregnant and Diabetic...so I could have a snack.... What, I get hungry LOL! She thought I was serious until I started laughing and told her I liked snacks. Teehee :)

I'm glad to have had a shorter school week just to try to get the hang of it. I don't really mind any of my classes yet so that's a good thing! We'll see!

I'm happy that today is my friday, I'm about to punch somebody at work.. People are so dumb sometimes. Ugh I don't even want to get into it!

First Day Back to School

It was my first day and I'm so tired.

I woke up at 7:30 and got ready to go to the gym. I ended up getting to the gym at 8:05 and worked out until 8:45. So I got a solid 40 minutes in. I think once I become a little more streamlined in my approach, I will be able to get that hour in. Burning 345 calories before I'm usually awake was awesome!


My first class was Math and I had to take a placement test. I hate those tests because I always forget how to do the math from the semester before. If I don't do it constantly, I lose it. She said that if we didn't get a good score that she would recommend us to retake 110. Oh hell nah, that's not going to happen. She did say she wouldn't force anyone so that's good. I'm not going anywhere. I knew the harder problems, but not like the fraction stuff. That we did way too long ago.

On to the downtown campus, I really liked my chemistry teacher! He's hilarious, and YOUNG! I think he was one of those really smart genius kids because he couldn't be over the age of 30 no way. He's got his doctorate, and also works at the state university as a scientist on the side. COOL!

My eats were perfect today, this is what I had:

Raspberry Oat Smoothie (from pinterest, and Martha Stewart)

You've got to try it, it's sooo good!

Lunch was a turkey sandwich with sprouts, a half slice of colby cheese, and horseradish mustard.

Dinner was grilled chicken, baked sweet potato fries, and spinach salad.

Snacks were a hardboiled egg, cheddar pretzels, and 1 ounce of mixed nuts.


I'm going to have a popsicle when I get home :)



I think it's so much easier to eat better when I'm BUSY! What about you?

School Tomorrow! Tag Post Too!

So I'm pretty much all set for tomorrow! Marc went with me to school for moral support and we bought my books, a new parking pass, and got information to have my transcripts sent to Mount Mary. It's the last one I had to have sent, and the only one I had to pay for. My books cost me 700 dollars today, for only three classes! It hurt giving the lady my debit card.

After going to school, Marc took me out to Olive Garden. We toasted to getting through another semester of classes and being there for each other, it was really sweet. He also talked to me about leaving the house so early in the mornings, and wondered why I had given myself so much time to get to class. Turns out I can sleep in an extra 45 minutes because of a miscalculations YAY! So I'll be going to bed at midnight, and waking up at 7:30.

I have my gym bag all packed!

So a new friend, and reader of mine Linda who blogs over at Frickin' Fabulous at 40 tagged me in a post of 11 questions, so here we go!

1). Do you have any tattoos? Do you regret it/them?
I have two tattoos, three if you count the one I got covered up by the second one..whoa, does that make sense?!? I absolutely regreted the second one I got, that's why I got it covered up. It was a little heart that I got with an ex friend. word to the wise, don't get matching tattoos! (both of the following pictures were taken when I was 18!)



2). What is one food that you couldn't live without or could eat every day?
Right now it's eggs! It's the perfect food! I like the taste, it's satisfies my hunger, and keeps me full for a long time. I love a wheat english muffin with egg and spinach!

3). What is one of your favorite memories of childhood?
I love being outside, exploring, playing, pooping in the woods you name it! LOL! Did I just own up to that??!!?

4). What did you want to be when you grew up? Did you fulfill your dream?
The first job I ever wanted was being the shampoo girl at the haircutting place! Didn't fulfill that one! I never thought I'd want to become a dietitian, it's amazing how life can change!

5). What's the farthest you've been from home? Where's home?!
When I lived in Maine it was Florida, when I lived in Florida it was Maine. Now I live in Wisconsin....lol!

6). Is there something that you love that you'd sort of be embarrassed to admit?
I loved stuffed animals! I'd still sleep with one if I could! I use a small pillow in place of where my teddies used to go. You can see a couple of my stuffies on the couch from yesterday's post!

7). Are you a side/back/stomach sleeper?
I'm mostly a left side sleeper. I also really like sleeping on my stomach, but not really ever my back. If I do wake up on my back, I usually have my knees pulled up kind of like a weird fetal position!

8). Have you ever met anyone famous? Who?
I've met Oprah and Stedman. Plus a guy from jackass who I can't remember his name I met from a Dare concert. I went onstage and sang happy birthday to one of my girlfriends. :)

9). Do you have an actor/actress/entertainer that you're infatuated with/fantasize about?
I always liked Robin Williams but Marc doesn't believe me!!! I love a man with a good sense of humor!
10). What's your least favorite household chore?
I hate doing the dishes. I always end up getting my shirt wet, and having water drip down my arms. Plus food crusted dishes GROSS ME OUT.

11). Do you have a bucket list?
If so, what's the one thing you REALLY want to do before...? I don't have a bucket list, but I really want to start a family, and own a home.

Apartment Tour!

So most of you know that I live in my husband's grandmother's home. It's over a hundred years old, and she's lived here for about 60 years. She's from Poland, and moved to America during the World War II era.

Since she has Alzheimer's and needs help with everyday tasks, Marc and I moved in with her in 2010 to help our family with the burden.

I've been telling you guys I'd give you a "tour" since I've started this blog and I'm finally ready, since we just deep cleaned and rearranged furniture. I didn't include the entrance of the apartment (you have to go through three doors just to get inside!) nor the pantry/closet, and the bathroom. You'll just have to use your imagination!

So this is what you see when you enter the apartment. There isn't a designated living room, or bedroom so we didn't have a choice really! The bed only fits in this room HAHA! You'll also see the rabbits first thing. We just moved them from our computer room to the main room so they could be closer to the heater. I think they like it, and I do to because I like watching them before going to bed. Speaking of which, Einstein got a haircut today! Now he can see!

Here's a few different angles of the main room. Yup our bed is on milk crates, we're rich LOL! One of Marc's new years resolutions is to make a bed frame! We had a metal one but it's cheaply made and not sturdy.

We have the computer in here, and a love seat. I really like this area because before we had the computer desk, and computer at the foot of the bed. Meaning we could be ridiculously lazy and stay in bed all day. So bad for the psyche I think! I've noticed we spend a LOT less time on the computer now. I also have all of my jewelry set up here. This used to be where my vanity was, and I wasn't about to take down all my stuff!

Now on to my favorite room the kitchen! I painted the cabinets, and the door. I don't think I got a good picture of the door though. I have posted about that door a while ago though!
My mom painted that picture of the azaleas. I'm so glad I rescued it from where we used to live! (long long story, maybe one day I'll brave that subject).
This next picture is why this room is my favorite! It's my little reading nook! Great place to sit when you're waiting for water to boil HA! Now on to what I make in my kitchen! Hummus and avocado sammies of course! With a side of cheddar pretzels :) My sandwich tasted a lot like the turkey tom from Jimmy Johns. It just was missing the turkey!

My Packed Weekend!

I had a great time this weekend, but man am I burned out!

I spent all day Friday making 3 cakes, homemade buttercream frosting, hummus, mac and cheese, and a fruit salad. Plus making sure everything was set for the baby shower games! Yes that's what I was up to, getting ready to cohost a shower for my sister in law Andrea, and her fiancé Andy.



After all that cooking, I went to my cousins house (after a yummy margarita with both needed!) to start working on the cake! Here is the finished product...


We had a lot of fun making this cake. It's hard work though, fondant is not easy!


At the shower, we played three games. Guess who's baby picture is which party goer, guess the candy bar melted in the diaper!, and what do you think the baby's going to look like? These were a lot of fun! They don't know the sex of the baby, so I thought it was cute everyone thinks it's going to be a boy!


They came up with hilarious names, and pictures!

We had a great time, and now I can focus on starting back to school on Wednesday! Plus getting back into a routine, I know my diet is going to rock when I'm at school. More structure means less time to snack! :) I'm counting down the last days of freedom!
